Job Description:

We are seeking a highly motivated postdoctoral researcher to join a cutting-edge project focusing on the development of multi-omics approaches for the identification of antioxidant and anti-inflammatory biomolecules in fermented foods.

Project Overview:

Microbial ecosystems in fermented foods are rich sources of bioactive compounds that offer significant potential benefits for human health. These ecosystems produce a wide range of biomolecules, some of which have antioxidant and anti-inflammatory properties. However, understanding and harnessing the full potential of such complex microbial systems requires holistic approaches, such as multi-omics techniques that can capture the diversity of biological interactions and molecular profiles.

The aim of this project is to develop and implement multi-omics approaches to analyze and valorize complex microbial ecosystems using a model cheese as a study system. The candidate will be responsible for advancing the state-of-the-art in multi-omics technologies, including shotgun metagenomics and metabolomics to investigate the bioactive compounds produced during fermentation.

The project will also include the organization and delivery of a training workshop aimed at researchers within the B4B LUE program. This workshop will focus on the methodologies developed during the project, fostering knowledge transfer and building capacity within the scientific community.

Key Responsibilities:

  • Develop and implement multi-omics approaches (shotgun metagenomics and metabolomics) for the study of microbial ecosystems in fermented foods.
  • Prepare and process samples for high-throughput nucleic acid sequencing and LC/MS-based mass spectrometry (Orbitrap and cut-off techniques) for metabolite profiling.
  • Perform bioinformatics analyses to process and integrate large-scale omics data, applying statistical methods to identify key biomolecules with antioxidant and anti-inflammatory properties.
  • Organize and lead a training workshop for researchers in the B4B program, sharing the methodologies and insights developed during the project.
  • Communicate findings through scientific publications and presentations at international conferences.

TERMS AND TENURE

This one-year position will be primarily based at the LIBio - Laboratoire d'Ingénierie des Biomolécules (Université de Lorraine, Nancy, France), with a 3-month research stay at the UMR INRAE SayFood for advanced metagenomic shotgun data analysis.

The target start date for the position is December 1, 2024with some flexibility on the exact start date.
